A vegan restaurant is now hiring in Donelson, Tennessee, another community on the rise.

The street of Lebanon Pike is changing and the latest addition is Donelson’s first vegan restaurant. It was converted from an old automotive shop.

“It’s the full, full deal. We’ll be serving breakfast, lunch, and dinner in a plant-based gluten-free style,” said Sunflower Cafe co-owner Kimber Saunders.

Sunflower Cafe used to be Donelson Muffler and Hitch, which just moved down the street.

“This place became available. It was an independent building, had a whole ton of character, and was grimy as all getout,” said Saunders.

While many national buildings are being torn down, they were able to add on to a building that’s been there for decades. The business was able to save the garage doors from the muffler shop and incorporate it into this new concept.

“I think all of us like a little bit of nostalgia,” said Saunders.

Saunders says she’s been looking for a spot there for years. They are a family-owned business and their flagship restaurant is Sunflower Cafe.

“Our current restaurant is down in Berry Hill and it’s been there for about six and a half years,” said Saunders.

As a resident, Saunders realized that a vegan and gluten-free restaurant was missing from her neighborhood.

“They want a place where they came and they know whatever they order is not only going to be delicious, but safe for them,” said Saunders.

She’s excited about having vegan cupcakes, quiches, brownies and cookies. She says the demand is there.

“I don’t know if you’ve seen or know of anyone who has food sensitivities or food allergies, but they just seem to be blossoming and growing,” said Saunders.

As Donelson grows, Saunders looks forward to having an imprint in downtown Donelson.

“I think Donelson is a wonderful up-and-coming neighborhood and by all means – I hope that we do well in the area, and the area is looking for plant-based meals.”

Their goal is to officially open in September.
